Dairy free, vegan iced Watermelon: the perfect summer time dessert
Looking for the perfect low-calorie dessert to serve for Labor Day?
The ingredients are simple to buy at the supermarket, in season so its perfectly sweet, and low calorie too!
When my family and I moved to Austin, Texas, we would eat watermelon all afternoon since it was super inexpensive and super sweet. I thought, there has to be a way we can enjoy this amazing fruit without having to add avocado or eat it plain all of the time.
"Its so hot here in Austin, the watermelon began melting while I tried snapping a photo of it!"
Makes approximately 8-10 servings
- 2 cups watermelon, peeled and diced
- Juice of a whole lime
- 1 Teaspoon agave
- ⅔ cup Good Karma Flaxmilk or a non-dairy milk
Place watermelon in a plastic container (not a plastic resealable bag) and place in freezer overnight or at least 12 hours.
Place frozen watermelon in food processor. Process until mashed. Add lime juice, agave, and non-dairy milk. Food process more until you get a sorbet type texture.
Serve immediately with fresh fruit in serving bowls, like you would ice cream. Pairs great with your favorite chilled white wine. Freeze any leftovers.
