Teff nut butter muffins- gluten free
Mini muffins are super easy and exciting for a toddler eat. At least for my toddler. What better than to get in those nutritious foods and stuff their bellies, than with delicious, fun tasting muffins?!
My son gets over joyed when he hears we are making muffins and loves to taste any new flavors we are testing out. Of course, he loved these especially since there is nut butter hidden in the them! See my numerous muffin recipes on our website.
Yes, they are very filling for an active 3 year old who has a short attention span to sit and eat.
We love teff flour in our family and I see my son phasing out of Teff flatbread (recipe in my cookbook) , so I figured let us try something new with Teff!
Makes 12 regular, 12 mini muffins
1/2 cup Bob’s Red Mill all purpose gluten flour
1 cup Bob’s Red Mill teff flour
1/2 cup brown sugar
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1 banana, peeled and mashed
1/4 teaspoon xanthan gum
1/3 olive oil
2/3 cup room temperature water
1 cup nut butter (see my recipe in our cookbook)
Preheat oven at 400F. Grease muffin tins or pan.
In a mixing bowl, combine both flours, sugar, baking powder, cinnamon, and xanthan gum. Separately in another mixing bowl, combine egg, oil, water, and nut butter.
Combine ingredients from both bowls and mix together. Place mixture in muffin tins or pan and fill each cup approximately 3/4 full. Bake for 25 minutes, Remove from oven and allow to cool. Enjoy a al carte or with your favorite jam.
